Things to do this Easter, a girls trip and dopamine dressing to a 'T' this Spring!

Happy almost April my dears! Spring has definitely sprung. Are we all okay? The kids have just broken up for Easter holidays so… send help! And maybe a few Easter eggs?!
I’m writing this from the passenger seat of Helen’s huge American car - it’s insane to think I used to have this vcar. Why does it now feel like I’m in a spaceship? I am very grateful I had this trip booked straight after everything because this girl needed it.

This month has been a lot. I did a three day live show and got to meet so many of you in real life which still feels surreal. I won’t lie, knackered. But the feeling in those rooms was unreal. You could actually feel the love. People came alone, with their mums, husbands and omg all the babies! I loved every minute of it!
Saying that, the last few months have been hard as well. I slipped into an ADHD depressive episode and knew I needed to get medication. I can’t help my children if I can’t help myself. And then to go from that, into rooms full of people who just get it…it honestly gave me something back and I hope it did for you too.
So thank you to each and every one of you who came, and to those who couldn’t make it but have cheered me on nontheless. My goal for 2026 is to build community in person as well as this amazing one we have here online, and what a great way to start it.

This USA trip has got me thinking about how friendships now are just… different. In your teens and twenties it’s constant. Messaging all day, seeing each other all the time. Now it’s more like “I haven’t spoken to you in two weeks but I would still trust you with my life”. Life is busy. Everyone is juggling something. And the good ones understand that.
Friendships should feel good. Not draining. Not like you’re being judged. Not like it’s another thing on your to do list.
Since moving home, some friendships from before don’t look the same anymore. Different stages of life, different routines. Some have older kids, some don’t have kids, and right now a lot of our time is with school parents because that’s what makes the kids happy. It doesn’t mean those other friendships are gone forever…but sometimes they change, and sometimes they don’t come back the same.
And I’ve just had to learn, that’s okay.
My friendship with Helen is easy. We can sit in silence in the car, on the sofa, wherever, and it’s not awkward. It’s actually quite nice. We’ve been through everything together. Fertility, having our babies, moving states and now moving countries. She just gets me. Even when my ADHD has me saying things that probably should have stayed inside my head.
No judgement. No overthinking. Just easy.
And I think that’s what friendships look like now. Not how often you speak, but how safe you feel when you’re with them. Quality over quantity. I truly don’t think female friendships get enough praise. Growing up, it’s always about finding a husband or a partner. But female friendships can hold some of the highest moments of your life. And if we’re honest, sometimes they can also be the greatest heartbreaks.
While I am so happy to be home in the UK (we all are so happy here), it is so nice to come back and visit. We have a few trips back this year which I’m buzzing about. Yeehaw!

Ingredients
4 chicken breast portions
2 green peppers
260g white basmati rice
1 lemon
2 tomatoes
2 red onions
64g tomato paste
50g honey
2 garlic cloves
11g chicken stock mix
5g parsley
4 tsp smoked paprika
Method
Preheat the oven to 220°C (200°C fan). Add rice and 600ml of boiling water to an ovenproof dish, cover with foil, and cook for 10 minutes.
Prep veg: dice onions, tomatoes, and peppers then crush garlic and chop the parsley.
Fry onions, peppers, tomatoes, half the garlic, paprika, tomato paste, and stock in oil over high heat for 4–5 minutes until softened.
Stir the pepper and tomato mixture into the rice, cover, and return to the oven for 15–20 minutes until cooked.
Flatten and season your chicken with salt. Fry for 6–7 minutes each side. Add honey for the last 2–3 minutes until caramelised.
Mix remaining garlic, paprika, lemon juice, and olive oil to make a dressing.
Serve rice topped with sliced chicken, parsley, dressing, and lemon wedges.
