Spring is in the Air...
A super easy family meal plan, dopamine dressing favourites and exciting home updates!
For a long time I always just thought I was broken.
Not in a dramatic way, just a bit of a rubbish person. Too reactive, too impulsive, couldn’t sleep, never finished anything I started...my brain constantly buzzing like the static of old dial-up internet that never quite connects.
While most of us are already carrying the normal mental load, households, work, children, relationships, remembering everyone else’s lives. I always felt like I was doing it with an extra weight I couldn’t explain. Everything seemed to take more effort. Small things overwhelmed me. Simple tasks became mountains. I put this down to being a mum and being in the hardest time of our lives, but no, my ADHD has become totally unmanageable because of these stressors.
I was diagnosed using a private online doctor in 2025 which, of course I couldn’t follow through on with medication because the forms were pages and pages…a form can feel like a mountain, avoid! So as you are reading this I am heading to an in person private doctor to go on my medication journey.
Many people nowadays believe ADHD and autism is ‘over diagnosed’ but I think that perhaps your quirky grandparent, or the town weirdo, probably was ADHD or Autistic…just nobody thought or cared to check why perhaps grandpa was collecting 100000 stamps?
Being ADHD or autistic does not make you broken it does not mean you are mentally ill. I am talking about these parallels because when you get ADHD tested they do also look for Autism too as they often go hand in hand.
Here are some things I do that I didn’t know weren’t typically ‘normal’ -
I struggle to shower - there are so many steps involved with this that feel overwhelming to me.
Food shops - the supermarket noises and lights can overstimulate me. I also struggle to think what i need for a meal unless its written down.
I struggle to sleep - at night my brain will race on all the things that happened that day, or could have happened.
As a child I was very angry at the world because I felt no one understood. Then I hated you for it. This is something I still struggle with.
I cant finish a sentence often, let alone a thought.
I will finish your sentence not because I don’t care but because I know what you’re going to say and I’m excited to keep going
Like most ADHD females I can mask very well but recently my mask has fallen and I am struggling.
This is the year ladies (maybe some men who knows) that we take charge.

Here’s a week of family meals for when you’re not feeling too hot, but the kids and yourself need feeding.
Monday
Jacket Potato - You can even buy sandwich filler from the supermarket and wack that on top. My kids love tuna, mayo AND beans. Crazy I know!
Tuesday
We love the mini frozen sausages from Tesco. Keep 2 bags in the freezer for emergencies. They can be put in the air fryer and cooked from frozen. If you’re feeling good make some mash, if not chips all the way. Of course with some peas or beans on the side.
Wednesday
Marry Me Chicken Pasta - recipe is below. You can also do this with Salmon which we enjoy, and can go straight into the air fryer and put on top of the pasta at the end. If your kids don’t like spinach, fine, take it out and give them peas or broccoli on the side.
Thursday
Hamburger Tacos - squash some mince on a mini taco then place meat down on a pan to cook. Add some cheese and salad. Done. Yum!
Friday
Treat yourself. Get a chippy!
Saturday
Chicken drumsticks - pop them in the air fryer with some Italian seasoning, garlic and onion powder, and some spray oil. Perhaps add a salad and garlic bread on the side.
Sunday
Pasta bake - I love the M&S pasta bake sauce personally but you can get that almost everywhere. Put in some broccoli and pre cooked sausages. In the oven, covered in cheese. Bish, bash, BOSH!
I have a few Youtube videos on full week of family dinners…I need to do more. I WILL do more!

Ingredients
650g boneless, skinless chicken breast (about 4), chopped into bite-size pieces
1 tbsp olive oil
3 garlic cloves, crushed
170g sun-dried tomatoes, drained and chopped really small
1 tsp oregano
2 tsp paprika
250g dried pasta (any shape works tbh)
650ml chicken stock
150ml double cream
50g parmesan, grated
120g spinach
Freshly ground black pepper
Method
Heat the olive oil in a large, deep frying pan over medium heat. Once hot, add the chicken with a generous amount of black pepper. Cook for about 5 minutes or until it starts to brown.
Turn the heat down slightly and add the garlic, sun-dried tomatoes, oregano and paprika. Stir together and cook for 3–5 minutes so that the garlic softens.
Add the dry pasta and pour over the chicken stock. Give it a proper stir, pop a lid on, and let it simmer for 15–20 minutes. Stir occasionally so it doesn’t stick. It’s ready when the pasta is cooked and most of the liquid has been absorbed.
Reduce the heat right down. Add the spinach and cream, stirring until the spinach wilts and the cream is heated through (only takes a couple of minutes). Double check the chicken is fully cooked and season with salt and more pepper if needed.
Take it off the heat and stir through the parmesan until it melts.

It was 17° the other day here in the UK! Considering it's been raining for the MOST of 2026 (how British), I’m sure I wasn’t the only one ready to drop the coats and grab my sunnies!
We are nearing the time of year that British women in their 30s+ put on their signature uniform - a summer dress and flat shoes. All these new spring colours are getting me excited for the longer evenings and sunnier days!

Charlie’s room we have found out won’t be done until closer to the summer because of his wardrobes. Great tradesmen are always busy and I have learnt, they are worth the wait. Here though is a sneak peak at this room - @millieturnerdesigns E Design service.

Sophie’s room had all the electric done, floors up, new window, all coving removed and wardrobes did get installed this week! Ahhhhh!
